Every morning we go to the market and carefully hand pick the best fish and vegetables of the day and devote ourselves to bringing you a taste of the four seasons of Japan. Cherry sea bream and Kyoto bamboo shoots in Spring, pike conger eel and Ayu sweetfish in Summer, matsutake mushrooms in Autumn, and wild-caught fugu, Matsuba crab, and soft-shelled turtle in Winter.
