But at our restaurant, we offer lamb that completely defies these kinds of images. The name of our restaurant “HITSUJI SUNRISE” is a reflection of our feelings about lamb, and our mission to convey to everyone the excellence of lamb meat. At HITSUJI SUNRISE, we believe that freshness is the key to lamb. The Japanese character for “fresh” is said to have been created by giving to the fish and sheep the freshness they required. In order to preserve this meaning, we at HITSUJI SUNRISE are committed to serving both domestic and international products. While only using exceptionally fresh meat (lamb, hogget, and mutton) that has never been frozen. Why is HITSUJI SUNRISE this particular about lamb? It is because in Japanese the character for ‘lamb’ is hidden in the word “delicious”. Less than 1% of domestically bred lamb is consumed in Japan. We purchase this rare and highly valuable lamb directly from the shepherds in Hokkaido and Tohoku. We also offer a wide variety of Australian lamb, including rare pasture-fed lamb, chilled mutton, and Tasmanian lamb, to give you a variety of different flavours to savour. Our Genghis Khan restaurant is unique in that we bring to you a wide range of lamb varying in age and region to dine on. We hope you all enjoy your very own lamb adventure!
