It has been 25 years since we opened our first restaurant in Ginza, the home of gourmet food. At Ginza Kinnome, we have revolutionised the concept of lamb meat with our Daiginjo Lamb Shabu. “Wait! This is lamb? But it doesn’t smell!” These are the reactions from many of the customers who have tried our Daiginjo Lamb Shabu. When we began our business lamb was only seen as a regional food of Hokkaido. With some people saying it had an odour. We at Ginza Kinnome have reconceptualised lamb by delicately preparing our meat in such a way as to overturn those notions. And we are continually loved by our customers for it.
